3 Twists on the Grilled Cheese Sandwich

One of my favorite things about cold weather is eating tomato soup and grilled cheese sandwiches. There is just something about the combination that I find irresistible. However, as I have gotten older I enjoy experimenting with with new flavors that extend beyond the traditional processed American cheese slices on Wonder bread.tomato soup and grilled cheese sandwichesHere are a few fun takes on the traditional grilled cheese I've tried recently.1. CapreseYou can never go wrong with tomato, mozzarella, and basil. Not an extremely clever twist, but it sure is fantastic. For a little unique spin, I recommend adding balsamic vinegar drizzled over the top. Yum!

I used french bread, sliced in about 1/2 slices, thinly sliced mozzarella, roma tomatoes, and shredded basil.

Each side of the sandwich was brushed with olive oil and grilled for approximately 3 minutes on each side.

They turned out great and didn't last long.

2. Avocado, cheese, and salsaThis was a surprisingly good combination! Avocado was smashed and spread on one piece of bread, peach and pineapple salsa was spread on the other piece and a slice of colby jack cheese was put in the middle to seal it all together.

Each side was coated with non-stick cooking spray and grilled to perfection!

Cream cheese wontons with avocado & salsaOne night with a Spanish-themed dinner, I threw together these little puppies. Sorry for the not-so-great photos taken with my iPhone, but you get the idea.
