Thai Chicken Tacos

Have you ever tried Thai Chicken Tacos? Do you find mixing world cuisines interesting or scary?I'll admit, I am the type of person who loves to share meals when I eat out because I hate having to pick just one thing so the idea of getting 2-for-1 flavors in a meal have me interested. And let me tell you...the combination of these two delicious cuisines (Mexican and Thai) with the added bonus of colorful veggies make these tacos a hit in our household.It helps that they come together pretty easily and work great as leftovers too. With all of that, what's not to like?Another reason I love to make tacos is because we have discovered that our daughter loves burritos. I mean, L-O-V-E, loves them.This love was discovered one day at Chipotle when she and I shared an order of soft tacos and I turned hers into a burrito "like Daddy's". Now, I don't know about you, but when my toddler likes food that I actually approve of, I do a big happy dance inside and figure out ways to incorporate it more often.That's where these tacos come in. They are made with corn tortillas, but I serve her taco rolled up in a small flour tortilla - just like a burrito. She'll even eat some of the veggies this way so I am one happy mama. Of course, I add cheese to her's too which is another love of hers.Mom and Dad love that we can eat tacos (again!) and not repeat the same flavors in regular Mexican tacos week in and week out. Sometimes it's just the little things in life, ya know? But, honestly, these Thai Chicken Tacos are super yummy and don't take too much to put together. Thai Chicken Tacos

A delicious combination of Mexican street tacos and Thai chicken make for an easy family dinner even the kids will enjoy.

Tacos

  • 1 pound chicken breast (thinly sliced)
  • 3 cloves garlic (pressed)
  • 1/4 cup fresh cilantro (chopped)
  • 1 shallot (finely chopped)
  • 1 tbsp fish sauce
  • 2 tsp dark soy sauce
  • 1 lime (halved)
  • 1 tbsp olive oil
  • 16 corn tortillas

Quick Cabbage Slaw

  • 2 cups shredded cabbage mix
  • 1 medium carrot (shredded)
  • 4 green onions (sliced)
  • 3 radishes (sliced)
  • 1/4 cup fresh cilantro (chopped)
  • 1/4 cup rice vinegar
  1. In a medium bowl, combine garlic, cilantro, shallot, fish sauce, soy sauce, and juice from half of the lime. Stir in chicken. Cover and refrigerate for 15 minutes.

  2. While chicken is marinating, make the Quick Cabbage Slaw. In a medium bowl, combine cabbage, carrot, green onions, radishes, cilantro and vinegar. Toss gently to coat. Set aside.

  3. In a large skillet, heat olive oil and cook chicken mixture over medium heat for 5 minutes or until chicken is no longer pink, stirring occasionally. Discard any remaining marinade.

  4. To heat tortillas, wrap in tin foil and warm in oven at 350 F for 10 minutes. Or wrap in damp paper towels and microwave for 30 seconds on high.

  5. To serve, layer two tortillas and top with chicken followed by Cabbage Slaw. Serve with extra slaw, lime wedges, and Sriracha or Asian chili sauce.
